Grilled Sammich on Coconut Flax Bread Recipe

Grease pan (we used butter).  Put down slice of bread, cheese, meat, another slice of cheese, another slice of bread.  Fry the sammich until the cheese melts, flipping midway through.

Note: Picture came out weird, bread wasn’t nearly that dark.

Coconut Flax Bread Recipe

  • 1 cup Coconut Butter
  • 1/2 cup flax seed meal
  • 1 tablespoon guar gum
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3/4 cup water
  • 2 tablespoons cider vinegar
  • 4 eggs

Preheat oven to 350. Grease a loaf pan — standard, not super-huge; the opening on mine is 8 1/2” x 4 1/2”.

In your food processor, with the S-blade in place, combine the coconut butter, flax seed meal, guar gum, baking soda, and salt. Pulse the processor to combine everything evenly — scrape down the sides and pulse a little more; you want a very even mixture.

In a glass measuring cup, combine the water and the vinegar. Have this standing by the food processor.

Add the eggs to the food processor, and pulse to combine. Scrape down the sides again!

Now turn the processor on, and pour the water and vinegar mixture in through the feed tube. Run till it’s a smooth batter — again, you may want to scrape down the sides.

Pour/scrape the batter into the prepared loaf pan. Bake for 45 minutes, then turn out on a wire rack to cool.

Caveman Crunch Recipe

The great thing about this recipe is that it’s infinitely customizeable.

  • Nuts (pictured: almonds, walnuts, pecans)
  • Cinnamon [optional]
  • Dried fruit* (pictured: dehydrated strawberries and blueberries)
  • Cream (or Almond Milk or Coconut Milk)

Tada!  Simple breakfast.  The kids love apple chunks in theirs.

* Note: Be careful with the dehydrated fruit as there can be a lot of carbs.

Chicken Salad Recipe

Ingredients:

  • Chicken, pre-cooked or canned
  • Mayonnaise, to taste
  • Pickle Relish, dill or splenda-sweetened, to taste
  •  Hard-boiled eggs

Cut up hard boiled eggs.

Put everything into a bowl and mix.

Stuffed Bacon Wrapped Kielbasa Recipe

Ingredients:

First cut the kielbasa in half so you have two more or less straight pieces.  Cut a line down the center of each piece but don’t quite cut through either end (it’ll help it to seal back up.

Fold the cheese slices into small strips.  Stuff the opening of the kielbasa with strips of cheese, BBQ and mayo.  There won’t be room for much.

Wrap each piece of kielbasa in bacon.  Secure with toothpicks.

Cook until bacon is desired level of done.  On Foreman grill at 350 degrees it generally takes 10-20 minutes with the kielbasa rotated once for even cooking.

Chicken Skins Recipe

Ingredients:

  • Chicken skins
  • Salt

Place chicken skins in a pan and cook at 350 degrees until desired crispiness (thighs ~45 minutes, legs ~30 minutes).  Sprinkle salt to taste.

The cheapest chicken around is often the bone-in skin-on type but the skin often doesn’t add much mixed into the meal.  These have a great taste and a good crunch and are very chip-like.

We’ve been using this trick for years now.  It’s awesome and I appreciate the explanation on the blog post of why it works(click the picture to be taken to the source).

A couple times the end result tasted a little too salty but I believe it’s related to the cut of steak though I never figured out which one.  Perhaps it didn’t like the round?  95% of the steaks I’ve used this on have turned out great.

Cheesy Ham and Egg Cups Recipe

Ingredients:

  • Ham
  • Eggs
  • Shredded cheese

Put single slice of ham into each slot in a muffin tin.

Crack an egg inside the ham.

Sprinkle cheese on top.

Add other ingredients as as you see fit.  There’s generally not a lot of extra space so if you try to fit too much in the egg will overflow (at least with large eggs).

3 yr old suggestion: “Next time you make this can you add raisins?”  Suggestion as of yet untested :)

Fauxtatoes Recipe

This is an old standby in any lowcarb rotation.  It also goes by many different names.  Fauxtatoes, cauliflower mashed potatoes, etc.

Ingredients:

  • 1 bag frozen cauliflower
  • 2 1/2 Tbsp butter
  • 1/3 C heavy cream
  • 1 C shredded cheddar cheese
  • 1/4 C sour cream
  • 1 chicken bullion cube [optional]
  • 1 tsp salt
  • Pepper, to taste

Cook cauliflower until fork tender and drain.

Place all ingredients into a food processor and run on high until it reaches desired consistency.
